Hotel Peralada occupies a working wine estate in Catalonia's Alt Empordà, where an ivy-covered 14th-century castle anchors 130 hectares of vineyards between the Pyrenees and the Costa Brava coast. The 64-room hotel sits beside its own golf course and a spa built entirely around vinotherapy, its treatment rooms drawing on grape-seed oils and red-wine wraps from the surrounding vines. Days move between the Jordi Soler Peix-designed course, threaded through stone pine and small lakes, and the Michelin-starred restaurant inside the castle itself, where the Mateu family — founders of the automaker Hispano Suiza — began reviving the estate's monastic winemaking tradition in 1923. When to go

Spring and Fall

April through June and September into October bring the Empordà's mildest weather and calmest greens. Summer is hot and draws holiday crowds to the coast; winter rounds are quieter and still playable, but more exposed to the Tramontana wind.
